
Nestled on the wild west coast of the Isle of Islay, the Kilchoman Distillery isn’t your average whisky house. Founded in 2005 by the Wills family, it revived a farm-distilling tradition and firmly planted itself as the only distillery in Scotland that grows, malts, distills, matures and bottles whisky all on-site.
From barley fields in the parish of Kilchoman to the still house, this is whisky made with full control and big character. Up to 440 tonnes of barley can be grown each year on the surrounding 400 acres of fertile land.The floor-malting process still happens here, a craft almost lost among larger operations.
