Deep within the historic cellars of Pol Roger—33 meters beneath street level—the magic of the vintage unfolds. Here, secondary fermentation takes place at a frosty 9°C, a process that allows the wine to develop its iconic, enduring mousse. Following fermentation, the wine undergoes the time-honored technique of remuage (riddling), a hands-on practice rarely seen in modern Champagne production, which further refines its exquisite texture and flavour profile.
The careful maturation in these cool, damp cellars ensures that every bottle captures a perfect balance of elegance and complexity. Nose: begins with notes of dried fruit, cocoa, almond and coconut. Allowed to breathe, notes of yellow fruits such as Mirabelle plum add complexity.
Palate: Exceedingly fresh - Crisp acidity gives it a strong backbone that carries right through to the finish. Those aromas of dried fruits from the nose persist, with nuances of citrus, lemon and bitter orange completing the palate.
Finish: Subtle notes of confected fruits come through, in particular candied orange peel.
