On the nose, this organic, biodynamic Mourvèdre offers an intoxicating mix of raspberry, dark fruits, herbal undertones, and graphite minerality, complemented by an almost meaty, wild aroma. The palate is intense yet refined, featuring deep fruit concentration, vibrant acidity, and layers of spice, all carried by a backbone of fine, structured tannins. The influence of the cool Atlantic breeze and rocky soils lends the wine a surprising lightness and freshness, despite its bold nature.
Waterkloof Winery, founded by Paul Boutinot in 2004, is a biodynamic, family-run estate where every aspect of viticulture and winemaking follows a minimal intervention philosophy. Located high on the windswept slopes of Schapenberg, the estate benefits from long ripening seasons, living soils, and naturally low yields, ensuring that each wine tells a true story of its origins. The Mourvèdre vines, planted as resilient bush vines due to their wind resistance, yield just four tons per hectare, resulting in exceptional concentration and purity.
Grapes are hand-harvested and transported by horse, before being sorted, whole-bunch fermented with wild yeast, and foot-pressed in large wooden fermenters. Extended skin contact (30 days), malolactic fermentation, and 16 months of ageing in neutral 600-litre barrels enhance the wine’s depth while preserving its natural vibrancy. No fining, minimal filtration, and only a touch of sulphur make this a vegan-friendly, unadulterated expression of Mourvèdre.
A bold yet beautifully balanced wine, it pairs exceptionally well with wild boar, grilled lamb, and hearty game dishes, bringing out its earthy, smoky complexity.
